What to do with peaches...



Here's what I did today... I mean, besides mounds of homework, and you know, laundry.  I picked up a case of peaches with my bountiful basket order last Saturday.  I love peaches.  Seemed like a great idea at the time.  But here's the thing... no matter how much you LOVE peaches, a case of them is kind of a lot, considering only 3 people still live in my house.  And here's the other thing... probably the most important of the two... I don't have any spare time.  I mean zero.  So I made this super simple freezer jam.  Couldn't have been easier... and it is sooo yummy... and the best part?  It was fast.  You gotta love fast.  Here's the recipe:





Jello Freezer Jam
5 c. fruit
4 c. sugar
1 (3 oz.) pkg. Jello
Let fruit and sugar set for one hour. Then boil ten minutes. Add Jello and boil two minutes. Put in jars.
 
  That's it.  I swear.  And it's so good.  I used peaches with raspberry jello, but the combinations could be endless. I tripled the recipe and ended up with 9 pints (18 cups).  Not too shabby.  Now back to the schoolbooks...

Nursing School...

In my oldness, I've finally decided what I want to be when I grow up.  It only took me 43 years to accomplish.  Not too shabby, eh?  I mean, better late than never.  3 years ago this month, I went back to college, thus starting the first of my mid-life crises.  I am going to be a nurse.  For reals.  I have spent the last 7 semesters working my tail off on nursing pre-reqs, and was accepted into Weber State University's Outreach nursing program.  This was a pretty big deal for me, considering Weber only takes 20 students into this program every two years.  Did I say BIG deal?  Anyway... I have worked really hard for this.  On Monday, I officially started class work.  Tomorrow is my first lab.  I am so excited for this new part of my journey.  To finally be doing clinicals in the hospital... on real live patients.  I have two more years to go until I have the letters RN instead of CNA behind my name on my hospital badge, but when I say only 4 more semesters, it seems sooo much shorter.  I work as a Telemetry Technician/Nursing Assistant in the ICU in my town, and absolutely love it... most days anyway, and am so ready to further my knowledge and scope of practice.  To this new chapter in my life, I say... "Bring it On!".

Getting older and even more fabulous...

So here's the thing... I'm getting old...ish...
Yep.  I said it.  But just because I'm in a place where 50 is getting a whole lot closer than 40, doesn't mean I'm not still fabulous... right?  In fact, as far as I can tell, I'm better than I was at 40.  Even better than at 30.  And a WHOLE lot better than I was in my 20's.  Why?  Maybe it's because I'm not afraid to try new things.  Maybe it's because I'm more comfortable in my own skin.  I know who I am, and what makes me happy.  The trials and errors I have muddled my way through have molded me into a woman who is self-confident and happy.  I think that's the answer... for me, anyway.  This will be a journal of the things I have learned, and am still learning.  I'm excited for what lies ahead =)
